CILLA collaborated with Camp Of Champions this summer! We showed up on the glacier to gather all the girls together and had some fun sessions on some of the features. I haven’t had this much fun in a long time!! And the best part was seeing the girls stoked on riding and pushing themselves! Big thanks to COC for making this happen and of course the campers who came and hang out.

MEGAN MIDDLETON UPDATE

My season is winding down. I recently traveled to Whistler for the Showcase Showdown, traveled to Mammoth for the PBRJ Championship, hit up the Hoedown Throwdown at Stevens Pass, and filmed a bunch. I will be at Mt. Hood this summer on the weekends… soaking in the sun and dialing in new tricks. Currently, I am healing an AC Separation. My first fall was at the Ride Shakedown in Washington but I took a recent fall while skateboarding with my buddy, Matt Christie, which tore the ligaments again. Right now… I am healing, editing footage, writing an editorial piece, and working a ton. I just spent the weekend up at Mt. Baker for the infamous Sesh-Up event and will be going back to take more photos on the step-up. My goal this off-season is to cross-train like crazy, save money, spend time with friends/family, and spend personal riding time down at Mt. Hood. Oh, and I have potentially big plans for next season… but, that will remain a surprise for now.

Cilla Layers is proud to welcome the iconic Tara Dakides to the Cilla Pro Team!  This gutsy legend of women’s snowboarding has done it all in her famed career.  It is hard to imagine any past, present or future female Pro rider who hasn’t been hugely inspired by Tara along the way.  Deemed the “Coolest Sportswoman of 2001” by Sports Illustrated, Tara has won almost every award and accolade possible in snowboarding, including 5 Winter X-Games Gold Medals, Snowboarder Mag’s  “Women’s Rider of the Year” 3 times in a row, EXPN’s “Snowboarder of the Year” in 2002, and ruled the Transworld’s Rider’s Poll Awards for 3 years running.  Tara’s groundbreaking parts in the men’s Mack Dawg snowboarding movies truly set the bar for other women to aspire to, and she followed it up in 2007 with Runway’s “LaLaLand.”

Independent, talented, feisty and beautiful, Tara really put women’s snowboarding on the map.  An influential and inspiring athlete, she has been featured on countless videos, magazines and TV shows, including an infamous David Letterman stunt show.  Tara’s multi-faceted interests include rally car racing, motocross, surfing, skating and other action sports.   Her riveting 2008 autobiographical documentary “Against the Grain” really laid it out with brutal honesty and self-assessment.  Tara has the courage of her convictions, and she is well known for her cool style and down-to-earth attitude.  She is currently filming a major motion picture in Austria, set for release in 2011.

Raw Blueberry Cheesecake

Raw Cheesecake

RECIPE by Dr. Ben Kim

Crust:
2 cups raw macadamia nuts
1/2 cup dates, pitted
1/4 cup dried coconut
Cheese:
3 cups raw, organic cashews, soaked for 1-2 hours
3/4 cup lemon juice
3/4 cup honey
3/4 cup coconut oil
1/2 teaspoon sea salt
1 teaspoon vanilla
Blueberry sauce:
One-pound bag frozen blueberries
1/2 cup dates, pitted
Directions:
1. To make the crust for this raw blueberry cheesecake, blend macadamia nuts and dates together in a food processor. Spread dried coconut over the bottom of a pie plate. Press macadamia and date crust onto the coconut; the coconut adds flavor to the crust and prevents it from sticking.
2. To make the cheese, blend cashews lemon juice, honey, liquid coconut oil, sea salt, and about a 1/2 cup of water until all ingredients come together into a smooth, cheese-like consistency.
3. With the help of a spatula, pour cheese mixture into the pie plate, onto the crust. After the entire cheese mixture is in the pie plate, give the plate a few gentle taps on the kitchen counter to remove air bubbles.
4. Place the pie in the freezer until it is frozen. Remove the cheesecake (including the crust) while it’s frozen, and transfer it to a serving plate. Allow it to defrost in the refrigerator.
5. To make the blueberry sauce, process thawed blueberries and dates (along with blueberry juice from the package) in a food processor until well blended. Pour the blueberry sauce over the cheesecake right before serving.
Enjoy this decadent, all-raw blueberry cheesecake.
Please note: Because this blueberry cheesecake is rich in macadamia and cashew nuts, I recommend eating only a single serving per day. Eating too many nuts on a regular basis can be stressful to your digestive organs.
