Raw Blueberry Cheesecake

Raw Cheesecake

RECIPE by Dr. Ben Kim

Crust:
2 cups raw macadamia nuts
1/2 cup dates, pitted
1/4 cup dried coconut
Cheese:
3 cups raw, organic cashews, soaked for 1-2 hours
3/4 cup lemon juice
3/4 cup honey
3/4 cup coconut oil
1/2 teaspoon sea salt
1 teaspoon vanilla
Blueberry sauce:
One-pound bag frozen blueberries
1/2 cup dates, pitted
Directions:
1. To make the crust for this raw blueberry cheesecake, blend macadamia nuts and dates together in a food processor. Spread dried coconut over the bottom of a pie plate. Press macadamia and date crust onto the coconut; the coconut adds flavor to the crust and prevents it from sticking.
2. To make the cheese, blend cashews lemon juice, honey, liquid coconut oil, sea salt, and about a 1/2 cup of water until all ingredients come together into a smooth, cheese-like consistency.
3. With the help of a spatula, pour cheese mixture into the pie plate, onto the crust. After the entire cheese mixture is in the pie plate, give the plate a few gentle taps on the kitchen counter to remove air bubbles.
4. Place the pie in the freezer until it is frozen. Remove the cheesecake (including the crust) while it’s frozen, and transfer it to a serving plate. Allow it to defrost in the refrigerator.
5. To make the blueberry sauce, process thawed blueberries and dates (along with blueberry juice from the package) in a food processor until well blended. Pour the blueberry sauce over the cheesecake right before serving.
Enjoy this decadent, all-raw blueberry cheesecake.
Please note: Because this blueberry cheesecake is rich in macadamia and cashew nuts, I recommend eating only a single serving per day. Eating too many nuts on a regular basis can be stressful to your digestive organs.

 


RAW CHRISTMAS DINNER!!

Yes we did it! We had an all raw Christmas Dinner on the 25th and it was AMAZING! Everyone brought a raw dish, from turkey loaf/gravy, stuffing, zucchini pastas, to cheesecake and chocolate cake.. and of course lots of good wine! The best part was how good and energetic we felt the whole night and even the next day!

Damon Plewes

About a month ago this kid Damon Plewes sent me some board graphics for Cilla. I thought it was pretty cute since Cilla doesn’t make boards, only women’s clothes. But when I checked out his art I was blown away by how talented this kid is, AND he’s only 13! I really wanted to share his art because the amount of passion and drive he has is obviously going to take him really far.

Little advice..

Please keep in mind that whenever you make a raw recipe, the taste result will never be quite the same as the last time you made it. This is because all the ingredients are raw, and for example one apple or one carrot may taste very different to the next. The good news is; since you don’t have to cook anything, you can just taste as you go and add ingredients until it tastes exactly the way you like it. And that’s the beauty of it!

So my advice is to follow recipes if you wish but feel free to add or substitute certain ingredients.. To me raw recipes are more like inspirations and I use them to guide me until I come up with my own. The more you do it the more you feel comfortable to freestyle with it. Remember that CREATING is what keeps us feel alive!

I use to go to the store and get the exact ingredients to make certain recipes. Now most of the time I take a look at what’s in my fridge and create a totally random and yummy recipe. I luv it!

 


Cup Cake anyone?

Raw Banana/Lemon Cup Cake

- 1/2 cup Tahini (sesame butter)
– 1 Banana
– 3 Dates chopped
– 1 ts grated lemon zest
– 1 ts vanilla extract
– 1/2 cup macadamia nuts
-1 ts masala
– 1 tbs coconut oil

Process all ingredients in a food processor. Pour into individual cup cake or muffin cups. Put in the freezer for about 20 minutes then enjoy! It makes about 4 or 5 cup cakes.
PS: It’s better to use the rubber cups, this way you can re-use them.

 


Puppy Love.. Kibbles or Raw?

I have two huskies my female Mika is 7, and Axl is 2. They’re both really happy and healthy.
A year ago I was feeding both of them kibbles. Axl got diarrhea really bad, it lasted over a month. The vet kept selling me antibiotics to give to my dog trying to get rid of some bacteria in his stomach. I probably put my poor dog on 4 different types of pills for a month, I felt horrible. He had it so bad that I had to take him outside every single night at 4 in the morning and many times a day. I was going crazy! Again after not getting any answer from my vet I decided to put him on Raw Food (for dogs). Believe it or not, the next day his bowel got back to normal. IN ONE DAY! Axl has been on raw since with no issues. I kept feeding Mika kibbles because I had tried to put her on raw in the past but she was throwing up a lot and I put her back on kibbles cause I just thought it wasn’t right for her. What I didn’t know was that she was cleansing and older dogs might take a little longer to get through it. Younger dogs shouldn’t have any cleansing transition

This summer Mika started to really slow down, she seemed tired and depressed all the time and she was overweight, even though I only fed her a small portion of kibbles once a day and NEVER table food. I took her to the vet and they discovered that her thyroid was low. After putting her on the thyroid medication she got a lot better. She got her energy back and lost some weight. A couple months later Mika had a seizure. It was the scariest thing to watch! She was just laying down in the living room and all of a sudden she tried to get up but couldn’t. Realizing she couldn’t get up she started panicking and tried to fight it, she almost looked like a fish out of the water. It lasted only a few seconds but it felt like forever, I thought she was having a heart attack! After it passed, she just layed there and was really out of it. She looked weak and confused and couldn’t even stand up.

We called the vet, brought her in and did all the blood tests, no answer. The vet could not tell us what was wrong with her and just told us to keep an eye on her. In the following days Mika was not much better, she would even sleep in til noon!

A couple weeks later she had another seizure! This time it was even worse, she really looked like she was dying. Crispin and I grabbed her and rushed to the vet without even calling, I was panicked. When we got there, she couldn’t even stand up on her feet and was really shaky.

Once again the vet did all the tests and came back with no answer besides that there was a minor bacteria on her stomach and gave another prescription for antibiotics. The only suggestion was to do more tests like going to Vancouver for a brain and spine scan. I felt hopeless. I started to really loose trust in vets all together. Then I thought to myself, “alright that’s enough! This all feels really wrong to me, I don’t want to keep giving drugs to my poor dog.” Then I started thinking about Raw Food, if raw food can heal allergies, depressions, cancer etc with humans, then why not with dogs! So I simply decided to put Mika on Raw Food for dogs. And guess what, Mika got better overnight! It’s been 5 months now and she looks younger than ever! Her face is lit, and she has so much energy that sometimes she wakes up at 7 in the morning running around and barking to get us out of bed! She’s like a puppy again. Plus she hasn’t had any seizures since, and in fact she’s been 100% healthy since.

My experiences are just to show you that the food we give to our dogs is as important as the food we eat. What happens when dogs eat raw (same as humans) is raw meat and vegetables are high in digestive enzymes. These digestive enzymes breakdown carbohydrates, protein and fat, making it’s much easier for your dog to digest it’s food and soak up the nutrients. Proper digestion can eliminate many on-going problems health issues.

Most kibbles contain unhealthy items for your dog. In many of the kibbles you will find unwanted ingredients like chemical preservatives, by-products, indigestible fillers, high levels of carbohydrates and high levels of fat. Kibbles are convenient, and less expensive, but they can also be harmful. It’s the same with humans; if somebody eats McDonalds everyday for many years, problems will occur soon or later.

Yes Raw food is more expensive than the most expensive kibbles… BUT. The amount of money  you’ll spend on kibbles and vet bills will be a hundred times more money than Raw Food everyday.

Please keep in mind that dogs can’t speak and they have a lot of physical endurance. They can’t tell us exactly what’s hurting and when they suffer. They have emotions and they can feel pain so we must take good care of them because they are vulnerable, they don’t get to make the choice and they depend on us.

Almond Butter Marinade

You guys wanna know a super easy and YUMMY raw recipe? It takes about 15 minutes and all you need is a cutting board, a knife and a big bowl! You can use a blender if you have one. This recipe isn’t mine, it comes from this book called “Raw Foods For Busy People” by Jordan Maerin.

Ingredients:

1/2 cup raw almond butter
1/2 cup water
1/4 cup Nama Shoyu or Bragg’s
1/4 cup honey or chopped dates
3-4 cloves garlic
1 tsp. raw apple cider vinegar                                                                                                                                                                           cayenne, and sea salt to taste

Whisk or blend all ingredients together. Toss with vegetables of your choice and marinate for 2-3 hours at room temperature, stirring often, or overnight in the fridge.

Last Days of Biking in Squamish

I think today might have been the last day for biking this season. Crispin and I took the dogs for a ride in the trails at the end of our street. Is was cold, wet and slippery in the woods but the sun was shining. There were a couple of really funny moments thanks to the wet leaves on the bridges. No crashes, just a wet foot and some good laughs haha. Sorry there are no photos of you Crispin but I guess that’s what happens when you hold the camera.
